Relleno

Ingredients:

• 1/2 kg. pork
• 1/2 kg. fatty ham
• 1/2 kg. chicken or turkey
• Breadcrumbs from two 2 loaves of bread
• Garlic
• A dozen eggs
• White pepper
• Nutmeg
• Saffron
• Parsley
• Pig intestines or artificial casing

Preparation:

1. Season pork and poultry with a little salt and allow to rest for a few hours.
2. Chop meat in meat grinder. Cut the ham by hand into very small pieces.
3. Mix all of the meat together along with the breadcrumbs, spices and eggs. The mixture should be uniform and soft.
4. Fill the casings using a wide-mouthed funnel and tie or sew the sausage ends. Prick the filled casings with a pin in order to let out any air that is trapped inside.
5. Put the sausages in a pot with enough cold water to cover them. Make sure they are not on top of each other.
6. Simmer on low heat for about an hour.
7. Remove them from the pot very carefully and place them on a cloth so that they dry completely.
