Ajo al almirez (Garlic in the mortar)

Ingredients:

• Almonds (small cup)
• Two cloves of garlic
• 200 grams breadcrumbs
• Olive oil
• Salt
• Large splash of vinager

Preparation:

1. Blanch the almonds and add them to a large mortar (almirez).
2. Allow the breadcrumbs to soak in water. Squeeze out water by hand and mix in with the almonds.
3. Peel and cut the garlic cloves. Add to the mortar with salt.
4. Mash everything together, slowly adding olive oil, until you have a smooth, even mixture.
5. Finally, add a large splash of vinager.

It’s best to used stale bread, only cutting off the crust. The amount of garlic can be adjusted to taste. The name of this sauce comes from the utensil used to make it, that being the ‘almirez’ (mortar). Today, many people simply use a blender.
